Although sake is known around the world as the traditional Japanese alcohol, Shochu is also highly popular in Japan, and the amount consumed exceeds even that of sake. The home area for this distilled spirit is Kagoshima and Miyazaki prefectures in south Kyushu.

While sake is fermented and made solely from rice, Shochu is distilled and made from various ingredients, including sweet potatoes, brown sugar, barley and buckwheat. Shochu is a spirit made from grains (rice, barley, buckwheat), sweet potatoes, or brown sugar, fermented with different types of koji (inoculated rice) and distilled into a clear liquor that’s the beloved workaday spirit of southern Japan. Shochu drunk straight, on the rocks, or diluted with hot water or lemon soda, and shochu proponents boast it doesn’t cause hangovers (a claim not sure science supports).

There are two ways to enjoy Shochu – go to Izakaya (local gastropub) or visiting factory side. Izakaya literally means “lingering at a liquor store”, and it originally began as the place for drinking rather than eating. But it evolved into a type of pub or restaurant to offer a wide variety of dishes together with alcohol beverages.0

While izakaya are well-distributed over whole Japan and you can easily visit yourself, we offer you an experience of visiting a distillery factory and seeing the process of producing this Japan’s most popular alcohol beverage. Our expanded factory tour was created out of our desire to allow even more people to enjoy our Honkaku Shochu (single distilled) while learning more about how Shochu is made. We hope you will enjoy seeing for yourselves the story behind the creation of Japan’s finest Honkaku Shochu.
